Significance of Flour

A premium quality flour stands as the cornerstone of prime pizza dough. 00 flour, which is a finely milled Italian variety with a moderate protein content, typifies this, achieving a harmonious juxtaposition of dough strength and pliancy. In instances where 00 flour is unavailable, bread flour serves as an adequate replacement, albeit resulting in a minutely altered texture.

Water's Temperature and Its Role in Dough Hydration

The water's temperature plays pivotal roles in the timing of fermentation and the dough's evolution. Cold water at about 45°F (7°C) is ideal for prolonged fermentation, enhancing the flavor. Conversely, for a faster fermentation process, lukewarm water at around 85°F (29°C) is preferred. A hydration level of 60-70% aligns well with the capabilities of most residential ovens.

Yeast Utilization and Fermentation Duration

An underpinning element of tasty dough lies in minimal yeast usage coupled with extended fermentation timeframes. Our formula includes a mere 0.2% fresh yeast in relation to the flour, fostering a fermentation period ranging from 24 to 48 hours. This gradual method facilitates the emergence of complex taste profiles and produces a more digestible dough.

Salt's Dual Function

Salt transcends its role as a mere flavor enhancer—it fortifies the gluten network and modulates fermentation rates. We advocate for the use of fine sea salt at a rate of 2.5-3% of your flour weight. Introduce it once the flour and water begin to amalgamate, to avoid any direct interference with the yeast's functionality.

Fermentation as a Craft

Subsequent to the dough's amalgamation, permit it to undergo initial bulk fermentation at ambient conditions for 2 hours, then segregate it into individual balls. Store these in sealed containers and let them undergo a cold fermentation for 24-72 hours. It's during this interval that starches gradually convert into sugars, yielding both the flavor and the coveted golden-brown hue in our crusts.

Gentle Dough Handling

Prior to pizza assembly, the dough should be removed from refrigeration 1-2 hours in advance to temper. A delicate touch is essential to sustain the gas pockets that have formed; hence, depress and spread the dough with your fingertips as opposed to rolling it out, which can collapse these essential air pockets.

Applying Heat: The Culminating Stroke

Though our professional wood-fired ovens can attain temperatures of 850°F (454°C), home ovens usually peak around 550°F (288°C). To bridge this gap, it's advisable to use a preheated pizza stone or steel that has been heated for a minimum of one hour, delivering the intense lower heat requisite for a crisp crust and a light, airy core.
